With a degree in graphic design and a decade in the hospitality industry behind him, aged just 22, Renato ‘Tato’ Giovannoni found himself ahead of his peers. He was looking for a career that would allow him to make use of his two prime talents: creativity and an aptitude for people. In bartending, he found just the tonic.
After working in his father’s restaurants, bars and nightclubs in the Argentinian coastal town of Pinamar throughout his formative years, of the three disciplines – serving food, bartending, managing clubs – he decided to make drink-making his métier. He moved to Buenos Aires to further learn the art at Gran Bar Danzón, Sucre and the Faena Hotel.
His fledging star was recognised early, and he went on to represent numerous Argentine brands on a global stage, quickly developing his own line of spirits and mixers, putting his own maritime spin on everything he produced. Growing up near the ocean and with a seafaring family history, a certain saline quality is never far from his drinks. Indeed, his signature Balestrini Negroni – which he has been canning and distributing internationally – is produced with smoked sea water, which he says reminds him of time spent with his grandfather on the beach.
Giovannoni opened Florería Atlántico in 2013. In the same year, it broke into the list of The World’s 50 Best Bars. Over the following years, he steered a steady rise up the ranking, winning the Highest Climber Award in 2017. Last year, it achieved the No.3 spot – the highest-ever rank for a Latin American bar.
In recent times, Giovannoni has spent roughly three quarters of the year away from home, travelling the globe and partaking in guest shifts, pop-ups and masterclasses. He notes that when on his travels, he tries to learn at least three new things from each destination where he practices his craft.
